Blueberry vanilla buckwheat pancakes

These pancakes turned out so fluffy and they were so good. 🙂

Ingredients:

  • 150 buckwheat flour (you can also use wheat or whole grain flour)
  • 3 tsp coconut sugar
  • 1/2 tsp vanilla
  • 2 tsp chia seeds
  • 1-2 tsp baking powder
  • 250 – 300 ml plant milk (I used oat milk)
  • 60 g blueberries, about a handful

Just mix all ingredients together and then add the blueberries to the pancake dough. Take a pan add a little bit of coconut oil and then bake your pancakes.

I topped my pancakes with agave syrup and a cashew sauce but you can top them with whatever you want for example maple syrup, banana, peanut butter, …

For the cashew sauce mix 1 tsp cashew butter with a tsp agave syrup and 3 tsp plant milk or water.
